Protein Packed Oatmeal Chocolate Chip Cookies 2 cups Oats 1/4 cup Protein powder 1tsp Baking soda 1/4 tsp Salt 6 tbs Butter, softened ( or coconut oil or margarine, softened) 1 tsp Vanilla extract 1 Egg 1 cup Sugar substitute of choice or 1/2 cup stevia baking blend (or 12-15 packets of stevia) 1/4 cup Mini semi-sweet chocolate chips
Oatmeal Banana Cookies 1/3 c. butter, softened 1/4 c. milk 2 c. oats 1/2 c. raisins 1 tsp. vanilla 3 ripe bananas, mashed Mix all ingredients together in a medium bowl. Let stand for 5-10 minutes allowing the oats to soak up all the milk. Drop by tablespoon full onto a cookie sheet. Bake 25 minutes at 325 degrees*. Allow to cool. Makes 2-3 dozen.
