Honey Roasted Carrots ~ 3 cups of Baby Carrots or Carrots cut into french fry like spears, 1 tbsp Honey, 1 tbsp. Olive Oil, Sea Salt, fresh Ground Pepper, Cooking Spray... I mixed the honey with some balsamic vinegar and poured on partway through cooking.
Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy.
Crispy Baked Asparagus Fries - Soooo good! I had some extra batter, so I made some baked avocados too. Shut. Up. I think I liked the baked avocados even more than asparagus. This would be good with zucchini sticks or cauliflower too. 425 for 13 min
Cut zucchini about inch thick. Spray both side lightly with oil and season with salt and pepper. Broil or grill the zucchini for about 2 minute on each side. Top with sauce and cheese and broil for an additional minute or two. (Careful not to burn cheese)
