    Ina Garten's secret for perfectly roasted chicken for chicken salads, pastas, etc. drizzle olive oil, salt and pepper over bone-in, skin-on chicken breasts. roast for 35 min at 350 degrees. remove skin, take off the bone, and chop. Can also use boneless skinless chicken for quicker cook time.

Once you prepare the stuffing you put it in a piping bag and pipe it under the skin. Serve with a pan jus made from pan drippings.
