Slow Cooked Jerk Pork w/ Caribbean Salsa: We love this crock pot pork dish; to quote a Skinnytaste fan... "This was by far the best thing I have ever put into my mouth. :" (I've made this now--it was kinda fun--I've never had jerk before, but my husband & I both liked it. I'd give the jerk 4-1/2 stars & the salsa 5 stars).The hardest part was gathering the ingredients.
Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt, 3/4 tsp pepper, 1 tsp ground cumin, 1 onion, peeled and halved, 2 bay leaves, 1 tsp dried oregano, 2 Tb fresh lime juice, 2 C water, 1 medium orange, use juice & spent halves. Need large dutch oven, broiler and foil & about 4hrs.
