    Cooking for friends tonight and made this! Accordian Potatoes drizzled with olive oil, garlic, Rosemary, salt and pepper.

    SLICED BAKED POTATOES: THINLY SLICE ALMOST ALL THE WAY THROUGH. DRIZZLE WITH BUTTER, OLIVE OIL, SALT AND PEPPER. BAKE AT 425 FOR ABOUT 40 MIN. OMG!

    These carrots are amazing! First carrot recipe I've found that I like! Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil (I used curry powder). The recipe said two pounds but I used one. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar (I added a touch more vinegar). Pop them back into the oven for about 5 more minutes to achieve sweet, salty, still slightly crunchy perfection!

    Low carb!...YUMMY!SIMPLE & EASY ... Just my style! Slice the zucchini in half. Slice off the bottom to keep it stable. Brush with olive oil and top with garlic or garlic powder, sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft. ENJOY!
