Spring veggie quinoa by Annie's Eats. Delish! It took some time to prepare and dirtied a few pans/dishes, but it was well worth it! I wilted the spinach with the other veggies. This is a great weekend dish or one to plan ahead (prep on weekend and mix it all together after work).
