Nacho Cheese Sauce without velveeta "I’ve tried many times to recreate the nacho cheese sauce you get poured over your chips at the theatre...I’m proud to say I have finally conquered it! Every cheese sauce I tried to make ended up grainy, gloopy and not even close to silky. And, the ones that promised to be smooth always had velveeta or some other processed cheese. This is the first one I’ve seen that doesn’t! "

16 oz cream cheese, softened, 1/2 c sour cream, 2 c grated Jack cheese, 2 c grated Parmesan, 1 can Rotel Diced Tomatoes with Green Chiles, drained, 1/2 tsp salt. Add ingredients to a large bowl and mix well. Spread into an 8×8 dish and bake for 20 minutes @425 until hot and bubbly.
Rammer Jammer Dip - 6 oz. cream cheese 12 oz. black beans 12 oz. Rotel 6 oz. shredded cheddar cheese Directions:Preheat oven to 300 degrees. Press cream cheese firmly into the bottom of an oven safe dish. Mix the Rotel and black beans together with even parts and drain all juices. Spread evenly over the layer of cream cheese. Cover the Rotel and beans with shredded cheddar cheese. bake dish for 30 minutes or when all cheese is melted. Serve with tortilla chips.
Chili Dip: 8oz pkg cream cheese and i can of any chili. Heat over medium heat till melted and blended. If you wanna get fancier add 1 1/2 cups shredded mexican blend or cheddar cheese and your fav hot sauce to your liking, love Chipotle Tabasco!!
