6 Medium Potatoes 2 - 3 Cloves Garlic, thinly sliced 2 Tb Olive Oil; Butter; Sea Salt; Freshly Ground Black Pepper. Preheat oven to 425˚. Put potato on a chopping board, flat side down. Slice thin, almost all the way through. Arrange potatoes in baking tray and insert garlic between slits. Scatter butter on top of each. Drizzle olive oil & sprinkle sea salt and freshly ground black pepper. Bake for about 40 minutes or until they turn crispy and the flesh is soft.
