Cranberry Orange Muffins

2 cups Cranberries, fresh
1 Orange, zest of

Refrigerated

2 Eggs, large

Baking & Spices

2 tsp 2 cups all-purpose flour
1 1/2 tsp Baking powder
1 cup Confectioner's sugar
1 cup Granulated sugar
1/2 tsp Salt
2 tsp Vanilla extract, pure

Drinks

2 tbsp Orange juice

Dairy

1/2 cup Butter, unsalted
1/2 cup Milk

    Cranberry Orange Muffins Recipe. I made a few modifications when I made them: after I zested the orange, I peeled the outside off then blended the fruit and added in to the batter: instead of milk I used sour cream (yogurt or buttermilk would be fine too): added 1/4 tsp baking soda to balance out the acids; had no cranberries so used frozen raspberries. Delicious :)
