Pesto Ranch Crock Pot Chicken Thighs ~ This slow cooked chicken dish could not get simpler. You literally toss the ingredients into the crock pot, close the lid and forget about it for a few hours. Love that!! The chicken comes out perfectly tender with flavorful pesto seasonings throughout. I like serving this chicken with my favorite mashed potato recipe and a little side salad. Chicken+Peanut Butter Lettuce Wraps iceberg or romaine lettuce leaves Filling: ½ to ¾ c. chopped Fuji apple (about 1 apple); 1 c. cooked chicken (I boiled mine with salt, pepper,+onion); 20 red grapes, halved; ½ c. chopped red onion; ¼ tsp. salt Sauce: 1 Tbsp. light mayo; 1 Tbsp. honey; 1 Tbsp. all-natural creamy peanut butter Mix all filling +then pour sauce+mix. Spoon into fresh, crispy lettuce leaf+roll it up. Makes four lettuce wraps.
