Low Carb Chicken Enchilada Bake: Excellent! Made this for dinner tonight and my hubby raved about it. The flavors went very well together. I used the whole can of black beans, corn, a little more salsa, and I used taco seasoning. Instead of the green onions I used green peppers. I suggest making it. Just beware of the gas.... worth it!
