Mediterranean Quinoa Salad. Use 1/3 Cup fresh feta in brine (rinsed). Omit dressing ingredients in recipe, Substitute 1 1/2 Tbsp. Cavender Greek Seasoning, 2 1/4 TBS. Lemon Juice, 1/8 Cup EVOO, 1 Clove Garlic Crushed.
Mediterranean light and yummy quinoa salad. A nice side to some grilled steak or chicken for dinner or even a good light dinner. It is chuck full of protein from the quinoa and loaded with tons of antioxidants from the tomatoes, olives, and spinach. Throw in some crumbled feta cheese and you will feel like you are sailing the Mediterranean!
