1 tbsp Ginger, fresh
1/2 tsp Lime peel
2 Onions, medium wedges thin
1 Peanuts
1 cup Peas, frozen
1 Sweet pepper, small red

Canned Goods

3/4 cup Chicken broth
1/2 cup Coconut milk, unsweetened
2 tsp Red curry paste

Condiments

2 tbsp Lime juice
3 tbsp Peanut butter, creamy
2 tbsp Soy sauce

Pasta & Grains

1 Rice, Hot cooked

Baking & Spices

2 tbsp Tapioca, quick-cooking

Thai Food holds a place in my heart that is obese and happy. If only I could eat Thai food everyday- I would be in heaven, or Thailand; one of those two.

Made this today, really tasty--love the coconut rice. Added chili garlic sauce to the crock pot after chicken cooked for a little spice. Served with cilantro and lime wedge. Fresh ginger would be good in the sauce too. Definitely will make it again. Crock Pot Thai Chicken | iowagirleats.com

    I made this on the stove top, and the flavor was a little too peanut buttery for me. I'll probably try adding more chicken stock if I make it again. Kennedy LOVED it though!

Crockpot Thai Peanut Chicken Recipe for 4: 2lbs, skinless chicken breasts 1 small red or orange bell pepper, sliced 1 small yellow bell pepper, sliced 1 white onion, chopped ½ cup chunky peanut butter 1 Tablespoon lime juice ½ cup chicken broth ¼ cup soy sauce 2 Tablespoons of honey 1/4 cup crushed peanuts for topping Place pepps and onions on bottom of crocpot (so chick doesn't dry out). Add chick. Mix PB, lime juice, broth, soy s and honey. Pour sauce over chick. Cook low for 4 hours.
