The Nouveau Carre - 1 1/2 ounces anejo tequila (or anejo sotol) • 3/4 ounce Benedictine • 1/4 ounce Lillet • 3 dashes Peychaud's bitters • ice • lemon twist, for garnish - Combine tequila (or sotol), Benedictine, Lillet, and bitters in a mixing glass and fill with ice. Stir until well chilled, about 30 seconds. Strain into chilled coupe glass; twist lemon peel over drink and use as garnish.
