Hot, hot, hot here in Dallas today. This soup sounds like a refreshing antidote ~~ Raw Avocado Soup from Martin Rookie

* Raw Avocado Mint Soup. Makes 2 portions. INGREDIENTS: 1 cup small peas, 1 small avocado, 1/3 large cucumber, 1.25 cups veg stock, 1Tbls lemon juice, 2-3 Tbls fresh mint leaves, 1 Tbls brewers yeast. METHOD: mix all ingredients in a blender until smooth. NEXT TIME: add one or more of these for a rounder flavour... tahini, nut butter, splash of tamari, pinch of cayenne pepper, 1/4 small clove minced garlic, grated ginger, apple cider vinegar, honey, mustard

I love avo and have never thought about using it in a soup. This Raw Avocado Soup, sounds like a great addition to my new healthy eating plan.
