Cheese and Vegetable Quinoa Bites: A genius appetizer for the health-conscious.If you’ve got a box or bag of quinoa on hand, some leftover veggies to get rid of, and maybe a little bit of cheese on hand, then you’ve got an easy, savory, and bite-sized appetizer ready in less than 20 minutes.
Quinoa pizza bites 2 cups cooked quinoa 2 large eggs 1 cup chopped onion 1 cup shredded mozzarella cheese 2 tsp minced garlic 1/2 cup fresh basil, chopped 1 cup chopped pepperoni slices (~1/2 of a 7 oz bag) 1/2 tsp seasoning salt 1 tsp paprika 1 tsp dried crushed oregano 1. Preheat oven to 350 degrees. 2. Mix together ingredients 3. Distribute in greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), press down gently to compact. 4. Bake15-20 minutes.
I've made these for years so going to go ahead and put the recipe here. I use stove top stuffing and flatten mine a little to make them crispier. We've never served with dipping sauce either.
