A simple, slow cooker meal - cheesy enchilada quinoa. I made this for dinner tonight. Really tasty. Add the jalapeño for full flavor. I used verde enchilada sauce. It's really a thick stew consistency. Perhaps serve in a bowl with tortilla chips. Good tailgate option and would work as vegetarian without the turkey.
Oven baked smashed potatoes! So easy and so good. I give them a headstart in the microwave. Then, transfer to lightly oiled pan, smash with a fork, dot with butter and a bit of my favorite Greek olive oil. Sprinkle on salt and pepper, bake until semi-crispy and browned on top. Great combination of crispy, roasted outside and soft, hot inside! Sometimes, I turn the broiler on at the last minute to add extra crispiness and crunch before serving.
