Only 500 Calories for the WHOLE loaf!! Pumpkin & Cream Bread (low calorie) I think we all have great pumpkin bread recipes. It's so easy to make and so perfect for the season. Pumpkin mixed with cinnamon and spices and baked into a pie or bread is on the top of my list of favorite things in this world. Which leads to the biggest problem I end up having with it: I could easily sit down and eat a half a loaf of a good pumpkin bread. Then, I could see myself taking a break for an hour and coming back to eat the other half. I'm speaking from experience. So my goal here was to play around with a recipe to make it so I could still wolf it down like a glutton but not feel so guilty about it. Because I honestly believe that even though moderation is a wonderful thing in life, some things are meant to be exceptions. Chocolate is one. And a bread that I wait all year to make is the other. So after tweaking some ingredients and getting rid of others altogether, this is what resulted. It's probably not as sweet as my favorite pumpkin bread (that can easily be fixed by adding more sugar which I don't want to do), but it was the perfect pumpkin texture and really quite good (especially the second day)! The ribbon of cream cheese is a tasty addition. There are about 46 calories per slice. Pumpkin and Cream Bread Yield: 2 loaves (14 slices each) Batter: 1-1/2 c. pureed pumpkin 1/2 c. unsweetened applesauce 1 whole egg 3 egg whites 1 c. all-purpose flour 2/3 c. whole wheat flour 1/2 c. Stevia Cup For Cup sweetener 1/2 c. granulated sugar 1 t. baking soda 1/2 t. ground cinnamon 1/2 t. ground nutmeg Cream filling 8 oz. reduced fat cream cheese 1/4 c. granulated sugar 1 T. all-purpose flour 2 egg whites 1 t. vanilla extract 1. For the cream cheese filling: Beat the cream cheese, sugar, vanilla, egg whites and flour until creamy and smooth. 3. Grease 2 8x4x2" loaf pans. Divide half of the batter between the two pans. Pour half of the filling in one pan and the other half in the second pan and smooth with the back of a spoon. Top with the remaining batter. 4. Bake in a 350 degree oven for about 40 minutes, or until a toothpick inserted comes out clean. Don't overbake or your bread will be dry on the edges. Cool and remove from pans. Store in the refrigerator in an airtight container. One serving (2 slices) = about 100 calories

Snickers Brownies *Recipe By Jasey's Crazy Daisy Brownie Layer 1 box of brownie mix, I prefer Betty Crocker's Fudge or Dark Chocolate mixes Ingredients called for on box 1/4 cup hot fudge topping, unheated, straight from the jar Nougat Layer *Adapted from How Sweet It Is 1/4 cup unsalted butter 1 cup granulated sugar 1/4 cup evaporated milk 2 (7 oz.) jars marshmallow creme (@1 1/2 cups) 1/4 cup peanut butter 1 1/2 cups salted peanuts, roughly chopped 1 teaspoon vanilla Caramel Layer 1 (17 oz.) jar of caramel, preferably Mrs. Richardson's Butterscotch Caramel Candy Bar Topping 1 1/4 cups chocolate chips 1/4 cup peanut butter. Prepare brownie batter according to package directions for a 9x13-inch pan, adding 1/4 cup hot fudge ice cream topping, unheated and straight from the jar to the batter. Make sure to follow the high altitude directions if you live at high altitude. Cool completely. Melt butter in a saucepan over medium heat. Add sugar and milk, stirring until dissolved. Bring to a boil. Add in the marshmallow creme (I didn't measure, because how exactly do you measure that sticky fluff? I used one complete 7 oz. jar and most of the second jar), peanut butter, and vanilla stirring until smooth. Turn off heat and fold in peanuts. Pour evenly over cooled brownies. Use a spatula to help spread the mixture. Cool. I stick the brownies in the freezer for about 15 minutes. Scoop caramel topping into a heavy bottomed saucepan and heat over low until caramel is soft and easy to stir. Pour the caramel over the nougat layer. Make sure to pour it evenly across the nougat covering as much as the surface as you can. This makes it easier to spread the caramel with a spatula. Let cool. Again, I usually stick this in the freezer for about 15 minutes. Scoop caramel topping into a heavy bottomed saucepan and heat over low until caramel is soft and east to stir rather than mess with hot. Melt chocolate chips and peanut butter together in a saucepan over low heat, stirring occasionally, until smooth. Pour over nougat layer and cool completely. I usually stick them in the fridge until the chocolate is set. They chocolate gets pretty soft when left out, so I like to store these in the fridge and let them set out for a few minutes before cutting them. You want the chocolate to be cool enough to be set, but warmed up just a bit so that they are soft enough to cut more easily. Enjoy!

It was missing a "sweet" quality that I can't put my finger on, but something that differentiates it from the Thai food place I frequent. Who knows, maybe they simply add sugar to their recipe. I used TJ's light canned coconut milk, so that kept the calories and fat content low in this.

Thai Coconut Curry Soup - Chef Michael Smith Ingredients 2 cans (14-ounce/400 mL each)of premium coconut milk 1 heaping tablespoon (20 mL) of Thai curry paste the tender stems of 1 bunch of cilantro, rinsed well 2 chicken breasts, thinly sliced 2 cups (500 mL0 of chicken broth 1 carrot, shredded 4 or 5 lime leaves 2 stalks of lemon grass, halved lengthwise, woody leaves removed 2 tablespoons (30 mL) of fish sauce the zest and juice of 2 limes a small knob frozen ginger a handful bean sprouts a 8 ounce (225 g) package rice noodles 1 bunch of cilantro leaves, rinsed well 2 or 3 green onions, thinly sliced a sprinkle or two salt or soy sauce Procedure Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle. Add the cilantro roots and chicken and sauté until the chicken is cooked through, about 5 minutes. Add the coconut juice from the first can and all the contents of the second can along with the chicken broth, carrot, lime leaves, lemon grass, fish sauce and lime zest and juice. Grate the frozen ginger into the broth with a Microplane grater or standard box grater. Simmer for 20 minutes or so. Stir in the bean sprouts. Add the rice noodles, gently pushing them beneath the surface of the broth. Turn off the heat and let stand until the noodles soften, about 5 minutes. Rice noodles don’t need to simmer like pasta to cook; they simply need to rehydrate in the hot liquid. Stir in most of the cilantro leaves. Remove the lemon grass stalks. Taste and season with a touch more salt (or soy sauce) as needed. Ladle into large bowls and garnish with the green onions and remaining cilantro leaves.

MMm quinoa veggie patties: Ingredients 1 cup quinoa, rinsed and drained 2 cups water 1 1/2 tablespoons finely chopped red onion 1/2 teaspoon finely chopped garlic 2/3 cup grated carrots 2/3 cup seeded and grated yellow squash 1/2 (10-ounce) package frozen chopped spinach, thawed and squeezed dry Zest of 1 large lemon 1/4 cup all-purpose flour 1 teaspoon baking powder 1 egg 1/2 teaspoon sea salt 1/2 teaspoon freshly ground black pepper Cooking spray 1 1/2 tablespoons chopped fresh dill 1 1/2 cups plain nonfat yogurt 2 teaspoons lemon juice Method Bring quinoa and water to a boil in a medium pot. Reduce heat to medium low, cover and simmer until liquid is absorbed, 20 to 30 minutes. Set aside off of the heat for 5 minutes, then fluff with a fork and set aside to let cool. Preheat oven to 400°F. In a large bowl, combine cooked quinoa with onion, garlic, carrots, squash, spinach, zest, flour, baking powder, egg, salt and pepper. Form mixture into eight (4- to 5-inch) patties and arrange on an oiled baking sheet. Bake, flipping halfway through, until lightly browned and just crisp, about 25 minutes. Stir together dill, yogurt and lemon juice in small bowl, then spoon over warm quinoa cakes.
