Sweet Potato Casserole. It was completely gone! It was really good. I used 6 large potatoes, so I did alter it a bit. I doubled the orange juice and added two more tablespoons of butter (it was too dry), and one more tablespoon of brown sugar. Instead of mashing it, I used a handheld mixer to remove any clumps. It was quick, easy, and definitely yummy!

Twice-Baked Potato Casserole Aunt Theresa bakes the washed potatoes, cubed, in a covered casserole dish until they are fully cooked but not overcooked. This can be done up to a day in advance. At room temperature, cool the baked potato cubes to just warm and refrigerate them for up to a 'day'.
