Chicken Enchilada Stuffed Zucchini Boats from Skinny Taste. Modified the recipe to make it Paleo by using no sugar added tomato sauce and omitting the cheese. The Chipotle Chili adobo sauce is spices than I thought it would be. I went a little too spicy but still really good!
