Caramel Stuffed Apple Cider Cookies, via Scrambled Henfruit. Pinterest has a lot of "stuffed" cookie recipes floating about, and this one convinced me that they're mostly overrated. I liked plain 'ol cookies I made without any caramels from the leftover apple cider dough much better than the ones with! Possibly it was just the use of Kraft Caramels in the center -- they were too hard and sticky when the cookies cooled, and things might have been better with homemade caramel sauce.
Death-by-Butter-Cookies (a.k.a., Gooey Butter Cookies): 1 box Duncan Hines butter recipe cake mix, 1 stick butter, 1/4 tsp vanilla extract, 1 pkg cream cheese @ room temperature (8 oz. pkg), 1 egg. Combine all ingredients with electric mixer until well blended. Chill dough for two hours. Roll into balls (about walnut size). Roll balls in powdered sugar.
