'Cloud Bread' - Practically carb free and very high protein! Since the sides that were facing the pan are perfectly flat, you use these to spread things on, or make sandwiches, or even as a burger bun! The choice is up to you, and you will be quite amazed at how much like a bun these really are!
1 large egg 5 lg of oat bran 2 Tbs of psyllium husk 3 lg wheat bran 1 heaped tbsp of yeast 6 lg yogurt 1/2 tbsp sweetener (xylitol) 1/2 tbsp grated salt - Amounts for a form of 6 cm x 12 cm - flour of any kind is prohibited! Mixing eggs with sweetener and salt about 1-2 minutes. In a separate bowl mix bran with yeast and put them over the eggs. Add the yogurt and mix well. Pour into a small form (I used a cardboard form 6cmx12 cm) and bake in preheated oven at 180C for about 40-50 minutes.
