Quinoa Stuffed Bell Peppers - These stuffed bell peppers will provide the nutrition that you need for a healthy, balanced meal! Not Brian's favorite peppers but I loved them and the kids ate the filling no problem! I also like the website this came from!!

Marinate tomatoes in balsamic vinegar for 30 minutes. Lay on a baking sheet, season with salt and pepper. Bake for 7 minutes at 350 degrees. Then top with sautéed spinach and mozzarella. Broil until cheese melts.

Spinach Artichoke Pasta

Spinach Artichoke Pasta. Just made this and it's not my fav. It might be because I had to make adjustments bc we like more sauce on our pasta and I didn't have the parmesan. The cream cheese and sour cream are really strong too. Idk if I'll make tho again
