Cheesy Potato Soup

Makes 9


1 lb Bacon, thick-sliced


1 cup Celery
1 tbsp Garlic
6 cups Russet potatoes
1 Scallions
1 White onion, diced (2 cups)

Canned Goods

3 cups Chicken broth, low-sodium


1 tbsp Mustard, dry
1 tsp Tabasco sauce
1 tbsp Worcestershire sauce

Baking & Spices

2 tbsp All-purpose flour
2 tsp Paprika
1 Salt


4 cups Cheddar, sharp
2 cups Half-and-half

Cheesy Potato Soup: 1 pkg frozen, diced hashbrowns; 2 cans cream of chicken; 1 can cream of celery; 1 pint half and half; 1/2 cup melted butter; salt and pepper to taste. Cook in crock pot on high for 3 - 4 hours. Add 1 cup of shredded cheddar cheese about 15 minutes before serving - heat long enough to melt cheese. Garnish with shredded cheddar.
