Corn & Edamame Succotash I made this but subbed out the basil for Cilantro, added a touch of honey, aq scoop of mayonaise and a bit of Dijon mustard. Good source of proteins and veggies, filling and delicious! MUCH better with the cilantro! MMMMMMMM!!!!

Baked Portobello Parmesan - fantastic! Filled it with my own veggie meat sauce and used panko w/ Italian breadcrumbs. Super crispy and great seasoning. I think using the rack is important for making it crispy like its fried. I'll definitely make it again!
