    {kiwi capiroska #cocktail} 2 cups kiwi, peeled, diced; 12 mint leaves, divided; 2 Tbsp sugar (or other sweetener), divided; 3 limes, juiced; 2 cups vodka; 2 cups tonic water; ice. garnish: 1 kiwi, peeled, thinly sliced. 1) In 6 glasses, add to each: 1/3 cup of diced kiwis, 2 mint leaves, 1 tsp sugar (or other sweetener), ½ lime juiced. Mint Lemonade. Make a syrup w/ 1 c each water & sugar. Add mint sprigs to steep while it cools. In a large pitcher, combine 1+1/2 c fresh squeezed lemon juice (~10 lemons), simple syrup, 2-3 c water to taste. Serve with lots of ice. Substitute other herbs for the mint for variations.

Mint Melon Sangria Ingredients: 1 ½ cups diced watermelon 1 ½ cups diced cantaloupe 1 ½ cups diced honeydew melon 2 cups ice 10 mint leaves Juice from ¼ lime 2 bottles sparkling white wine Directions: Pour all of the diced melons in a large glass pitcher. Top with ice. Gently muddle mint leaves with the lemon juice. Add to pitcher. Pour wine in last and stir with a wooden spoon.

Pineapple-Mint Vodka 1 pineapple 750-milliliter bottle vodka 2 mint sprigs Peel and slice 1 pineapple. Combine in a large jar with one 750-milliliter bottle vodka and 2 mint sprigs. Let sit for at least 8 hours and up to 3 days (the flavor will grow stronger the longer it sits). Strain. Muddle strained-out pineapple and mint for drinks if desired.
