Gingered Chicken Thighs

Gluten free • 40 mins to make


6 Chicken thighs (about 1-1/2 pounds), boneless skinless


2 Garlic cloves
2 1/4 tbsp Ginger, ground

Canned Goods

2 tbsp Chicken broth


2 tbsp Honey
1 tbsp Peanut butter, reduced-fat creamy
2 tbsp Soy sauce, reduced-sodium

Baking & Spices

2 tsp Curry powder
1/2 tsp Red pepper flakes


4 tbsp Orange juice

This is a great marinade. I double the EVOO in it (so I could coat the chicken breasts easily) and consequently it didn't have enough lemon. I will double the lemon juice and zest next time. And there will be a next time! :)
