Low carb pancakes: 1 C almond meal, 3 eggs, 1/8 tsp vanilla, 1/8 tsp cinnamon. Mix and pour into buttered or greased skillet. Cook, flip, cook. Done. :) Keep them on the small side if having trouble sticking together. Voila!
Chocolate chip Oatmeal Cookie Pancakes - heathy with no egg or dairy. The taste awesome, but are hard to cook due to small amount of liquid. Use oil, not butter, and go medium low if you have a gas stove. Flip carefully, as they look like they're gonna fall apart.
