    Easy, Peasy, And Lemon Squeezy… – Lemon Ricotta Pasta W/ Seared Scallops: perfect for Spring. Two to three minutes before the fettucine is ready to be drained, start searing the scallops in a pan coated with butter and olive oil - the fat should be "foamy" and cook each side for about 2 minutes or so each. We added more peas to this recipe - delicious with the ricotta and lemon - easy and made from scratch in under 30 minutes. 10/10

    Creamy Tomato & Goat Cheese Risotto. Yummy and a great starting place for customizing - I didn't have risotto rice so I used Israeli couscous. Also very easy to customize spices based on what you're serving. I used a lot less cheese so it was not super creamy, but still very flavorful. I used kale instead of spinach, but I would chop whatever green you use finely. Definitely a recommended dish!
