Chile Lime Mango and Papaya

Papaya, avocados, lime juice and cilantro – this luscious tropical salad will make you feel like you are in the sunny Caribbean.  This salad pairs wonderfully with rice and beans, grilled chicken, fish or steak and it's loaded with vitamin C, A, folate and fiber.  You can add a jalapeño to add a little kick! This would even make a great salsa to serve with chips.  Perfect for all diets restrictions, vegan, gluten free, low carb, egg free, nut free, to name a few. Enjoy!    Papaya Avocado…

Papaya Avocado Salad by skinnytaste: Dressed with lime juice, red onion and cilantro, this salad takes you straight to the Caribbean! Now, I gotta go pick a papaya!

Greek Yogurt Papaya Boats: 1 medium papaya, ripe Plain Greek yogurt 1/2C blueberries 1 banana 1/2C granola Raw honey Chia seeds (optional) Slice papaya in half lengthwise. Spoon out seeds and scrape away just enough meat to create small well. Fill each side with yogurt, fruit and granola. Drizzle with honey and sprinkle with pinch of chia seeds if desired. Voila!

Roasted Papaya with Brown Sugar
