Crock Pot Apricot Chicken: 4 – 5 Boneless Skinless Chicken Breasts, 16 oz. Jar of Apricot Preserves, 8 oz. Catalina Dressing {Russian Dressing can be substituted}, 1 packet Dry Onion Soup, Mix Cook all day in Crock Pot. Try substituting cranberry sauce or pineapples for apricot jam.

I am still on the look-out for carb-friendly recipes I can enjoy. I really like this recipe because I can serve it with rice so others can have their carbs and salad or grilled/roasted veggies so it's a good meal. :)
