Tikvenik recipe -- Tikvenik is a traditional Bulgarian dessert. It is a kind of banitsa, or pie made with filo pastry, and it is filled with pumpkin. (Generally a banitsa can contain cheese, onions or nuts instead of pumpkin). Usually I substitute the pumpkin for butternut squash, which is more traditional in Bulgaria.
In honor of my friends in Svishtov - BG, I shared banitsa (Баница) with Brenda tonight. Yes, I know, it's traditionally a breakfast food; but it was SO good for dinner too! (Banitsa is a traditional Bulgarian food prepared by layering a mixture of whisked eggs and pieces of cheese between filo pastry and then baking it in an oven.) This recipe turned out great, tasting so much like the wonderful banitsa I had in Bulgaria. Enjoy! http://www.squidoo.com/Bulgarian-Banitsa-Recipe
