Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
I can't believe that my favorite soup from Zupas is so easy to make at home in less than 30 minutes. This stuff tastes so close to the original Zupas recipe it's crazy!
