15K+ As I stated in my last post, I am in Chicago for a week with my kiddos. Of course I arrived here with a camera with no working battery. OF COURSE! I was really looking forward to taking some pictures of my mom’s WONDERFUL cooking! That’s right! I learn from the best! But I decided to ” Make the Best of Everything” and work on some ” round up” posts. I have been meaning to do some of these for a while, as I am finding organizing recipes by category on my blog and making them easy access to my readers difficult. So Here they are. 12 NON- BREAD lunch ideas. And in this Paleo- Gluten- Free trend ( or migration). It is fun to come up with tasty recipes that might not have bread- but don’t lack flavor at all! I eat bread almost every day, but I think that sometimes it is nice to eat less of it- or perhaps, just more veggies and fruits. Baked Zucchini Fries; 1 lb zucchini, cut into 4-5-inch sticks. Dip zucchini sticks in 1/4 cup whole wheat flour, then dip in 2 eggs, beaten; then roll in combined 2 cups Panko breadcrumbs, Salt, Pepper, 1/2 tsp garlic powder, 1/4 tsp cayenne pepper. Bake in preheated 425 oven on parchment covered baking pan for 18-20 minutes.

Low Carb Breakfast Casserole ---------------------- Broccoli, Ham, and Mozzarella Baked with Eggs..4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well. 1-2 cups diced ham (1/2 - 1 lb.) 1 cup low-fat grated Mozzarella 1/3 cup thinly sliced green onion (optional, but good) 8-10 eggs, well beaten. BAKE 375,35-45 MIN.
Broccoli, Ham, and Mozzarella Baked with Eggs: You'll want to eat breakfast for dinner. Use 1-2 cups of lean diced ham for this recipe. I used 6 whole cups of barely-blanched broccoli, but you can get away with less. Spray a 9x12" casserole dish with non-stick spray and layer the broccoli and then the ham. Then put grated low-fat mozzarella and green onions over that. Season to taste with Spike Seasoning and fresh-ground black pepper. Beat the eggs and pour them over the other ingredients. Then use a fork to "stir" just until all the ingredients are coated with egg. Bake at 375F/190C for 35-45 minutes (depending on which version you choose and how done you like it. Serve hot. This can be kept in the fridge for at least a week and reheated in the microwave. (Makes 8 servings; recipe created by Kalyn.) Layer broccoli, ham, Mozzarella, and green onions (if using) in casserole dish. Season with Spike Seasoning and fresh-ground black pepper and pour beaten egg over. Use a fork to "stir" the mixture just until all the ingredients are coated with egg. (It might look like there is not enough egg, but carry on!) Bake 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown. (If you use the higher amount of eggs, it will take the longer baking time, but start to check after about 30 minutes.) Serve hot, with low-fat sour cream if desired. This can be kept in the fridge for at least a week and reheated in the microwave.
