Tex-mex carnitas 4-5 lbs boneless pork shoulder or pork butt, cut into 2-inch cubes, keep fat, 3/4 c OJ, 1/4 c lime juice (abt 2-3 limes), 4 cloves garlic, peeled and crushed,  2 t ground cumin, 2 t Kosher salt.For serving: corn tortillas, cheese, Southwestern Slaw or shredded lettuce, and salsa verde. Place in Dutch Oven, cover w/water top of meat, bring to boil, then simmer 2 hrs uncovered, increase to MedHigh, stir & meat falls apart Cook 45 min. til water gone, then fry til crispy…

Pioneer Woman's Mexican Lasagna - This was REALLY REALLY tasty and an easy go-to meal.  This recipe makes food enough for just about everyone in your neighborhood.  I halved the recipe and still couldn't fit it all in to my round stone!  Craziness!  I used instant brown rice to cut down on the prep time which proved to be a good move.  This will be in the meal rotation for sure!  :)
