Southwest chicken!!!! Chicken tenderloins-cut into small squares, 2 cups instant rice, 1 taco seasoning, 1 can rotel, grated cheese. Cook chicken in skillet. Add 1 1/2 cups water, taco seasoning and rotel. Heat to boiling. Add 2 cups instant rice. Stir, remove from heat and cover. Once water is absorbed, stir and top with cheese. Let cheese melt and voila!! Dinners served! Eat with tostitos, tortillas or by itself!

Chicken Cordon Bleu Casserole 1 lb. Pasta (I used penne-you could use any fun shaped pasta) 1 cup Chicken Breasts, cooked and cubed 1 cup Ham, cooked and cubed 1 1/2 cups Milk 8 oz. Cream Cheese (softened) 2 Tbsp. Dried Minced Onion 2 cups Swiss Cheese, shredded Salt Pepper Cayenne Pepper(optional-add to cheese mixture) 1 cup Panko Crumbs 1/2 cup Butter, melted
Creamy Burrito Casserole Brown 1 lb hamburger or ground turkey & half an onion. Drain. Add a 16 oz can of refried beans & a pack of taco seasonings. Separately, mix can of mushroom soup & 4 oz sour cream & spread 1/2 of this in baking dish. Layer 3 torn up tortillas, meat mixture, cheese & hot sauce (optional). Sprinkle w/ more cheese (need total of 2-3 cups). Bake, uncovered, at 350°F for 20-30 min.
Hot Chicken Salad Recipe 2 T fresh lemon juice 1/2 t pepper 1/2 t salt 1/2 cup slivered almonds 1 cup diced celery 2 cup cooked chicken breast, cubed 1 cup mayonnaise 1 cup grated sharp cheddar cheese 2/3 cup crushed potato chips Combine all except chips. Place the mixture in a greased 9x13 dish. Spread the crushed potato chips on top. Bake at 350 for 20 minutes, or until bubbly.
