Roasted Cauliflower & Potato Soup with Dill Whipped Cream

Gluten free • Serves 4-6


1 head Cauliflower
1 heaping tbsp Dill
2 cloves Garlic
1 Leek
1 Onion, chopped (about 1 cup), medium
1 lb Russet potatoes

Canned Goods

4 cups Chicken stock, good-quality

Oils & Vinegars

4 tbsp Olive oil


1 packed cup 4 ounces grated sharp cheddar cheese, grated sharp
2 tbsp Butter, unsalted
1/2 cup Creme fraiche
1/2 cup Heavy cream
1/2 cup Whole milk

Roasted Garlic and Cauliflower Soup - I used an immersion blender and really tried to take my time. I still could have gone a little longer and I probably spent a good 3 minutes blending. You really want to get that creamy texture.
