Pancake Bites "baked muffin-sized pancakes with blueberries or bacon. You eat bacon with pancakes, not in them! And I'm pretty sure a "baked muffin-size pancake" is a muffin.

2 cup uncooked oatmeal (instant,not steel cut)  1 1/2 tsp baking powder  1/2 tsp salt  1 cup fat-free skim milk  1/2 cup Egg Beaters (or 2 eggs or 3 egg whites)  1/2 cup unsweetened applesauce or 2 mashed bananas,pumpkin,sweet potato or fruit  1/4 cup sugar  1 tsp vanilla extract  1 Tbs ground cinnamon or other spices    Combine wet ingredients and add dry ingredients. Bake in sprayed 11×7 ( or jumbo 6 muffin pan) at 350 for 30-40 min.

Oatmeal Cookie Oatmeal: This was delicious! I used a teaspoon of brown sugar instead of Splenda and added pecans instead of walnuts. Great way to start my morning!
