Chickpea and Edamame Salad

Vegan • Gluten free • 20 mins to make • Serves 4-6


1/4 tsp Basil, dried
1/4 cup Carrots
2 (15.5oz each) cans Chickpeas
3 tbsp Cranberries, dried
3/4 cup Edamame
1 Garlic clove
1/3 cup Green pepper
1/4 tsp Oregano, dried
1/4 tsp Rosemary, dried

Baking & Spices

1/3 cup Red pepper
1 Salt and pepper
1 tsp Sugar

Oils & Vinegars

1 tsp Distilled vinegar, white
2 tbsp Grapeseed oil
2 tbsp Olive oil

Chickpea, Feta and Parsley Salad Drain the chickpeas, rinse and place in the salad bowl. Add crumbled feta, spring onion, parsley and lemon juice, season with salt and pepper. Add the cooled onion and garlic mixture and remaining oil and mix well.
