Taco cups ▼ THURSDAY, JANUARY 19, 2012 Taco "Cupcakes" Once again, another find from Pinterest... (I'm willing to bet that most of these recipes will be found on that website) which took me to http://www.emilybites.com/ which is where I found the recipe for the MUST TRY, "Taco Cupcakes!" Not only are these Taco Cupcakes fun but they taste amazing too! (and not to mention an easy clean up when all is said and done) Here is what you will need: 1 1/2t chili oil (found near the Asian ingredients) *I could not find this... it probably was right in front of my face but seriously, never found it. So I just used some Olive Oil... and I don't think I really even needed that! 1/2 lb 95% lean ground beef *We always use ground chicken when it comes to Mexican dishes... No real reason other then the fact that we prefer the taste! Use either or, it will still be tasty! 1 T taco seasoning 3/4 c canned black beans, drained and rinsed 16 wonton wrappers (found in the produce section) 5 T + 1t of queso dip or salsa con queso 1 c chunky salsa 1 c reduced fat shredded Mexican cheese Guacamole for serving When looking at these ingredients, you may notice that I have no queso dip... I apparently thought I only needed Guacamole (which is a garnish to top the taco cupcakes). So when I realized I needed some sort of cheesy substitute, I searched my pantry/fridge for anything that would work. This is all I came up with. Do not judge me. Although this canned cheese substance has zero healthy ingredients, the recipe only calls for about a tsp per "cupcake" so with that being said... I didn't feel completely guilty! ;) Before we get started I just want to mention that I did not use the recommended measurements on any ingredient. I used a whole pound of ground chicken and the whole pack of taco seasoning and the whole can of beans. (I just saved the leftover meat mixture for taco's) So don't feel like you need to use exactly what is stated in the ingredients list. Just use your best judgment and don't pack 'em too full! So, let's get started! First, pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside. Heat chili oil (or Olive oil) in a saute pan or large skillet over medium-high heat, add the ground beef and taco seasoning and brown beef, breaking it with a spoon. Add black beans and continue to cook, stirring occasionally, for a few minutes until warm. 3. Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Spoon a teaspoon of queso dip into each wonton wrapper and spread across the bottom. See, easier then it sounds! :) cheese. Follow by spooning some of the meat/beans mixture into each cup (I would say about two teaspoons) and then spooning a teaspoon or so of salsa on top of that. Sprinkle a pinch of the cheese evenly over the top of each cup. Meat Mixture Salsa and Cheese Got it? Now do it all again, one more time! Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients. Just press around the edges, as if you are putting on the top of a pie. This is what it looks like before you pop it into the oven! 4. Bake for 18-20 minutes until golden brown. Let cool for 5 minutes before removing from muffin tin Look at that crunchy, cheesy goodness! Add a little bit of guacamole (or sour cream if you prefer) And enjoy! Seriously, you will SO enjoy these! (and I have to say, if I would have left that "queso cheese substitute" out... it would not have tasted the same!) I highly recommend you go out and buy these ingredients and make these this weekend! Out of all the new recipes we have tried this week, this was our FAVE. Geh, YUM!

Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside). Prep all strawberries and set aside. 2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs. If not serving immediately, refrigerate until serving.

Add the butter. Once the butter is melted, add the mushrooms. Cook 4-5 minutes until they start to sweat. Add the thyme and continue to cook another 2-3 minutes. Set mushrooms aside and allow to cool. For the Bread Preheat oven to 350 degrees. Cut the bread lengthwise and widthwise without cutting through the bottom crust. This can be a little tricky going the second way but the bread is very forgiving. Place loaf on a foil-lined baking sheet. Insert cheese slices between cuts. Pour the mushrooms between the cuts. Cheesey Mushroom Pull Apart Bread I'm just going to come out and say this bread is AMAZING. Seriously. If you are looking for ideas for the Superbowl, MAKE THIS BREAD. Actually, you should make it this weekend to test it out and play with what flavors you want to use as a practice run. Then make it again next weekend to share with your friends at the Superbowl. But be warned, it's quite addictive. In fact, maybe you should plan to bring two to your Superbowl party. It's seriously so gooey from the melted cheese. The butter, green onion, and poppy seed sauce on top really takes this bread to the next level. When I saw this recipe, I was instantly thinking of other flavors you could stuff into the bread. Anything that works on pizza would be great here. I went with provolone and mushroom this time. I'm sure it would be great with pepperoni and mozzarella, bacon and cheddar, or just plan old cheese. Just an excellent blend of flavors. This is a simple recipe-but there is some prep time involved. Graduation is right around the corner, this would make a great dish for a graduation party. Chimichangas. I made these a second time with ground beef instead of chicken and liked them better. Fry ground beef and use Old El Paso taco seasoning. Roll-up the meat and a good handful of cheese in a whole grain tortilla. Fry in a small amount of oil on each side. Turn quickly...they will brown fast. Serve with whatever on the side (lettuce, tomatoes, sour cream, etc.).

Chicken Teriyaki Chicken teriyaki slightly adapted from the wonderful Nigella Kitchen 2 tablespoons sake ¼ cup mirin (sweet Japanese Rice wine) ¼ cup soy sauce 2 tablespoons light brown sugar 2 teaspoons grated fresh ginger 4 spring onions, white part only, sliced splash of sesame oil 800g (1¾ pounds) chicken thigh fillets (no skin or bones), cut into bite-sized pieces ½ tablespoon neutral vegetable oil freshly ground black pepper handful of parsley leaves, chopped rice, to serve In a bowl large enough to hold all the chicken pieces, mix together the sake, mirin, soy sauce, sugar, ginger, spring onions and sesame oil. Add the chicken pieces and turn to coat each one of them in the sauce. Leave for 15-20 minutes. Heat the oil in a large, shallow frying pan (with a lid) and, using a perforated spoon, transfer the chicken pieces to the pan and sauté until they look cooked on the outside. Pour the marinade over the chicken, bring to a boil, then cover and turn down the heat, cooking for 5-10 minutes or until chicken is cooked through and sauce is thick. Stir in with freshly ground black pepper and the parsley. Serve immediately with rice. Serves 4-6 – I halved the recipe above and Joao and I ate every little bit of it. :)

If french fries and onion rings ever got married and had a baby, I think it would be something like this…a potato ring. You have a light and crispy outer coating with a soft potato and caramelized onion center…why? Because we can I guess, who knows…but it’s kind of fun, right?! My boyfriend and his friends have this thing where every super bowl they have a “Deep-Fry Fest” where, well they deep fry everything; so if you’re anything like my boyfriend you now have another “Deep Fry Fest” recipe to use! Two things I can’t stress enough is: 1) the importance of having the potatoes completely coated; no holes please, or the mashed potatoes will pour out of the holes once they hit the oil. 2) the importance of the rings being frozen solid before entering the oil…it just helps with the frying, that’s all. Finally, since ranch is pretty much good with anything it only seemed natural to pair these savory, fried treats with a quick and easy homemade ranch sauce. Enjoy! xx Jenny Potato Rings with Homemade Buttermilk Ranch Dipping Sauce Makes 32-40 Ingredients: 3 large russet potatoes, cleaned peeled and chopped into large pieces 1/3 cup plus 2 tablespoons heavy cream ¼ cup unsalted butter (½ stick), softened ½ caramelized yellow onions, chopped 3 tablespoons chives, thinly sliced 2/3 cup all purpose flour 1/3 cup rice flour 2 tablespoons garlic powder 1 tablespoon onion powder 1 tablespoon smoked paprika 2 eggs, lightly beaten salt and pepper to taste 2 quarts vegetable oil buttermilk ranch sauce: 1/2 cup light mayonnaise ¼ cup low-fat buttermilk 1 ½ teaspoons fresh lemon juice 2 tablespoons flat leaf parsley, minced 1 tablespoon chives, thinly sliced 1 teaspoons dill, minced ½ teaspoon dry mustard salt and pepper to taste Directions: 1. Place the potatoes in a large pot and fill with water. 2. Bring to a boil on medium-high heat and cook until the potatoes are fork tender, a20-25 minutes. 3. Drain the potatoes into a colander and pour back into the pot. 4. Pour the cream and butter over the potatoes and mash with a potato masher until smooth (Add more cream 1 tablespoon at a time, if needed). 5. Fold in the caramelized onions and chives until fully incorporated. Season with salt and pepper and stir. 6. Spread the mixture onto a sheet pan, about ½ inch thick and place in the refrigerator until the mixture has cooled down and hardened, 4-6 hours. 7. While the potato mixture cools place both flours, garlic powder, onion powder and smoked paprika into a shallow dish and stir together until fully combined. Set aside. 8. When the potato mixture has cooled, remove from the refrigerator and using 1-1 ½ inch circle cutters, cut out as many circles as possible (usually makes about 32-40). 9. Using a ½ inch circle cutter, cut out a ½ inch circle from every 1-1½ circle, creating a small donut shape. 10. Dip the potato rings into the flour mixture followed by the egg mixture and finally again in the flour mixture (make sure the rings are completely coated). 11. Place the coated rings onto a clean sheet pan, lined with parchment paper and place in the freezer and allow the rings to freeze completely, 4-6 hours. 12. Once the potato rings are frozen, preheat the oil, in a large pot, to 375°F. 13. While the oil heats up, place the ingredients for the dipping sauce into a mixing bowl and whisk together. Season with salt and pepper. 14. When the oil is hot, carefully drop a few of the rings into the oil and fry for 4-6 minutes or until golden brown. 15. Drain onto a large plate lined with paper towels and season with salt with pepper. 16. Repeat with the remaining potato rings and serve immediately with the dipping sauce.
