Grilled Fish Tacos Ingredients 1 mango, peeled, pitted, and cubed add to shopping list 1 avocado, pitted, peeled, and cubed 1/2 red onion, finely chopped Juice of 1 lime, plus wedges for garnish chopped fresh cilantro salt and black pepper canola oil 2 large mahimahi fillets (1 1/2 lb total) 1 tbsp blackening spice 8 corn tortillas 2 cups finely shredded red cabbage Directions 1. Mix the mango, avocado, onion, and the juice of 1 lime in a bowl. Season with cilantro, salt, and pepper. 2. Heat a grill or stovetop grill pan until hot. Drizzle a light coating of oil over the fish and rub on the blackening spice. Cook the fish, undisturbed, for 4 minutes. Carefully flip with a spatula and cook for another 4 minutes. Remove. 3. Warm the tortillas on the grill for 1 to 2 minutes or wrap in damp paper towels and microwave for 1 minute until warm and pliable. 4. Break the fish into chunks and divide among the warm tortillas. Top with the cabbage and the mango salsa. Serve with the lime wedges. Healthy and Whole Grain Recipes [Veggie wheat berry salad] 1 cup wheat berries, preferably the soft white variety 1 lb tomatoes, finely chopped 1 green bell pepper, finely chopped 1 cucumber, halved lengthwise, seeded, and finely chopped 3 celery stalks, cut lengthwise into thirds and finely chopped 1/2 small red onion, finely chopped 2 Tbsp olive oil 2 Tbsp fresh lemon juice 2 Tbsp red wine vinegar 2 tsp Worcestershire sauce 1/2 tsp salt (optional) Several dashes hot red pepper sauce 1. Soak wheat berries in a big bowl of cool water for at least 8 hours (up to 16 hours max). Drain them in a fine-mesh sieve or colander. Pour wheat berries into a large saucepan, fill it about two-thirds of the way with water, and bring to a boil over high heat. Reduce the heat to medium and simmer until grains are tender with some chew still left, about 1 hour. Drain, then run under cool water to bring wheat berries to room temperature. Drain thoroughly. 2. Put cooked wheat berries in a large bowl and stir in remaining ingredients. Set aside to marinate at room temperature for 20 minutes before serving.

Chicken tacos with charred tomatoes (healthy recipe) Ingredients: 2 plum tomatoes, cored 8 ounce(s) boneless, skinless chicken breast, trimmed of fat 1/4 teaspoon(s) salt 1/8 teaspoon(s) freshly ground pepper 2 teaspoon(s) canola oil, divided 1/2 cup(s) finely chopped white onion 1 clove(s) garlic, minced 1 small jalapeño pepper, seeded and minced 2 teaspoon(s) lime juice, plus lime wedges for garnish 2 teaspoon(s) chopped fresh cilantro 2 scallions, chopped 6 small corn tortillas, heated (see Tip) Directions Heat a medium skillet over high heat until very hot. Add tomatoes and cook, turning occasionally with tongs, until charred on all sides, 8 to 10 minutes. Transfer to a plate to cool slightly. Cut the tomatoes in half crosswise; squeeze to discard seeds. Remove cores and chop the remaining pulp and skin. Cut chicken into 1-inch chunks; sprinkle with salt and pepper. Add 1 teaspoon oil to the pan and heat over high heat until very hot. Add the chicken and cook, stirring occasionally, until it is browned and no longer pink in the middle, 3 to 5 minutes. Transfer to a plate. Reduce the heat to medium and add the remaining 1 teaspoon oil. Add onion and cook, stirring, until softened, about 2 minutes. Add garlic and jalapeño and cook, stirring, until fragrant, about 30 seconds. Add lime juice, the chicken, and tomatoes. Cook, stirring, until heated through, 1 to 2 minutes. Put tomatoes (with juice) in food processor and process until coarsely chopped. Set aside. 2. Heat oil in large heavy frying pan over medium-high heat. Season chicken with 1/4 teaspoon of the salt and 1/8 teaspoon of the black pepper. Brown chicken breasts about 3 minutes per side. Transfer to plate. 3. Add bell pepper, onion, and garlic to pan and cook until softened, 5 minutes. Add rice and cook, stirring, about 1 minute. Stir in stock, chopped tomatoes, turmeric, bay leaf, and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Bring to a boil over high heat. 4. Reduce heat to medium-low, cover pan, and simmer 25 minutes. 5. Return chicken to pan and nestle into rice mixture. Cover and simmer 15 minutes longer. 6. Stir in peas and cook until rice is done, 5 minutes. Remove bay leaf. Serve sprinkled with basil.
