    Candied-apple île flottantes: 2 cups (500 ml) unsw. apple juice,6 egg yolks,1/3 cup (70 g) cane sugar,1 cup (250 ml) heavy cream, 1 cup (250 ml) milk, 1 vanilla bean: Cook apple juice over m. heat until it reduces to 1/2 cup (125 ml). Whisk the egg yolks and sugar. Combine heavy cream, whole milk and vanilla bean. Heat over m. heat . Pour the hot liquid into cold and whisk. Cook over low heat stirring (thicken) - Meringues (cook in hot water) 4 egg whites, Pinch of salt 1/2 cup (100 g) sugar

Fuyu persimmons. These can be eaten right away. They won't tie up your mouth with tannins like Hachiya persimmons. Hachiya persimmons have to become incredibly soft and squishy ripe in order to be eaten. Fuyu persimmons can be eaten like apples, skin and all. These are very addictive and I eat these like mad when they are in season.
