Eat Yourself Skinny!: Cheese Quesadillas. If you don't have a quesadilla maker like her (I don't), a griddle, skillet, or electric skillet will do just fine. Just brown on each side for, I'd say, about 3 minutes on each side, and they're ready!
Southwest Salad & Creamy Avocado Dressing.... Considering how we always have these ingredients kicking around the house this is an AMAZING idea. The dressing is pretty great too
