    I have made these roasted veggies just about once every week since I saw this. Its a great healthy supper just for me!

    Cauliflower is my new low-carb best friend. 1 head cauliflower 2 large eggs 1/2 c cheddar cheese, grated 1/2 c panko 1/2 t cayenne pepper salt olive oil

    How did I NOT know this? Never boil corn again! Want to know the easiest way to cook corn on the cob? Throw it in the oven at 350° for 25-30 minutes. That’s it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once it’s cooked. Cut off the large end and it slides right out with no silk. We do this all the time.....good on the grill too!


    Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this.

    Finally! A store-bought salad dressing made with healthy fats (organic olive oil), instead of canola/soy/etc... Also, no sugar added! We usually make our own but it's so nice to have this in the refrigerator for meals in a hurry! #tessemaes #justeatrealfood

    Healthy and delicious zucchini cakes

    Oven roasted squash and zucchini...yummy! After slicing the veggies and placing on the cookie sheet. brush everything with a generous helping of olive oil. sprinkled garlic powder, kosher salt, ground black pepper and grated Parmesan cheese (the kind in the green can)put them in a 400 degree oven for about 8 minutes. Then put the cookie sheet under the broiler to crisp up the parmesan topping and finish the cooking process.
