Spicy Green Chili Chicken Enchiladas: (SOUNDS GOOD) *5 chicken breasts, *1 tsp salt. *1 medium onion chopped, *2 cloves garlic minced, *16-18 flour tortillas burrito size, *3 28 oz cans green chili enchilada sauce, *1 4 oz can jalapenos, *1 6.5 oz can black olives sliced, *8 C pepper jack cheese shredded, *16 oz sour cream, *2 T olive oil, *S & P to taste
Crockpot Pineapple Chicken Recipe ~ Chop 1 medium onion and place in crock pot. Place 3-4 Chicken Breasts on top of onion. Add a can of pineapple (juice and all) over the chicken. Add 2 tablespoons soy sauce and 1/2 cup chicken broth on top of everything. Cover and cook on HIGH in the crockpot for 4-5 hours or on low for 6-8 hours. Serve over rice and with a steamed veggie.
Sooooo good & sooooo easy, 3 simple ingredients and just pop it in the oven! I didn't broil as suggested and I did more of a 'shake and bake' style with just putting the ingredients in a bag and shake to coat. I did this with 3 boneless chicken breasts and the ratio of seasoning to chicken was perfect! ~Susan
