Pumpkin Bread with Cinnamon Pepita Streusel Topping~I made this and it was awesome! The only change I made was to cut down the white sugar by 1/2 cup. I loved the pumpkin seeds in the streusel topping. It would be good with dried cranberries or chocolate bits as well. Yum!! I also did not have small loaf pans, so I just used two regular loaf pans.
Pumpkin Gingerbread Muffins - HIT! - mine did not rise like the ones in the photo, but they were delicious! Nice light texture; gingerbread flavor more pronounced than pumpkin; I doubled the amount of the streusal topping and would add chopped nuts next time for a little crunch; great snowy day muffin!
