Looking to try and change a little bit of my diet at a time. Would love to go vegan, but can't imagine giving up dairy. My sister is Vegan and looks and feels great. Quite an inspiration!

    So I made soy chorizo today and LOVE it! I have never been a huge fan of ground beef's texture, so I think I actually prefer this version to the original that can contain either beef or pork. Kinda spicy! Used regular cheese sparingly. Couldn't go all the way with the vegan cream cheese! This will be one of my new healthier eating meals. Hooray!

Bang Bang Shrimp Bang Bang Shrimp 1 lb shrimp, shelled and deveined smaller shrimp works best 1/2 cup mayonnaise 1/4 cup Thai sweet chili sauce 3 -5 drops hot chili sauce, just a few drops 1/2-3/4 cup cornstarch, to coat the shrimp in Directions: 1. Mix mayo and sauces for coating. 2. Bread shrimp in cornstarch. 3. Deep fat fry the shrimp until lightly brown. 4. Drain on paper towel, put shrimp in a bowl and coat with the sauce. 5. Serve in a lettuce lined bowl, top with chopped scallions.

Makes 2 cups Ingredients: 2 heads cauliflower, cut into small florets 3 small shallots, cut into wedges 6 garlic cloves, unpeeled 2 tablespoons coconut oil 1/3 cup nutritional yeast 1/4 cup almond milk 1 teaspoon Dijon mustard salt and pepper to taste BAKE THE FIRST FOUR INGREDIENTS IN AN 375F DEGREE OVEN FOR 30 TO 40 MINS. BLEND WITH REST OF INGREDIENTS IN A BLENDER UNTIL SMOOTH.
