5 tbsp Coriander
3 large ears Corn
1 clove Garlic
1/2 Lime, Juice of
1/4 cup Red onion
1 Scallion
1 Tomato, large

Refrigerated

2 Eggs, large

Condiments

1 Ranch dressing

Baking & Spices

1 cup All-purpose flour
1 tsp Baking powder
1/2 tsp Baking soda
1/2 cup Cornmeal
2 Salt and freshly ground pepper, Coarse

Oils & Vinegars

1 Canola or vegetable oil
1 1/2 tsp Olive oil
1 1/2 tsp White wine vinegar

Dairy

2 tbsp Butter, unsalted
2 tbsp Buttermilk
