    Winter Vegetable Torte | This was not bad. Allows you to use up a bunch of veggies before they go bad. I did add thinly sliced sweet potato but even after I let the dish cook a few more minutes, the sweet potato was still a little to firm so I'll leave it out next time. I recommend you eat this the same day. I also used zucchini, yellow tomato and red tomato. I would make this again.

Vegetable torte - start with thinly sliced sweet potato, then layer a different veg., sprinkle with grated cheese between layers. Use springform pan placed on baking sheet. Roast 425 for 20 min, remove foil and roast another 15 min. Let rest before slicing into wedges

Drizzle skillet evoo, sauté garlic/onions; add rice /puree,mix, flatten. Pour heated stock over, heat til liq reduces, cover/foil cook 40 min. Garnish.
