    Oven baked bacon: Preheat oven to 400º. Wrap the inside of cookie sheet with foil. Place a wire cooling rack on top. *Collapse the legs if it has them.* Place 1 lb bacon over the rack, slightly overlapping each piece to make room for the whole pan. Cook for about 15 minutes. The bacon will start to shrink a little. Take out of the oven and turn each slice over. Cook for another 15-20 minutes or until browned and lightly crispy. .

Easy Oven Roasted Potatoes 2 large potatoes, scrubbed 3 Tbsp olive oil 1 Tbsp Italian Seasoning 1 tsp salt 4 Tbsp Parmesan cheese Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat.  Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown.  Top with Parmesan cheese and bake an additional 5 minutes.

Fresh Tomato & Mozzarella on Toast: 173 calories per serving as is. Healthier version...whole grain bread, lowfat cheese. Looks yummy!
